Super Breakfast Bowl

One of my favourite ways to start the day. Greek Yoghurt base with healthy toppings that keep well in the van.

  • 2 big spoonfuls of yogurt
  • Fruit of choice cut up in to neat small pieces
  • Muesli or oats for healthier choice
  • Sprinkles: Chia seeds, Coconut shavings and Cinnamon powder.

My favourite choice of fruits: Gold Kiwi, Strawberries, Banana

*If you don’t have a fridge in the van, you can always buy the yoghurt the night before you find your spot and keep it in a cool place of the van.

METHOD:

  1. Crack the eggs into a bowl. Add your dairy of choice plus salt. Whisk just until the egg yolks and whites have mixed. Add grated cheese.
  2. Warm olive oil in your pan and add your toppings of choice, then sprinkle some garlic powder over it.
  3. Add egg mix to the pan and stir with a spatula briefly to combine and distribute the mixture evenly across. If you are adding feta, now is the time. 
  4. Let cook till it looks puffy and and jiggly in the middle. About 5 mins on a medium heat. And DIG IN

Easy & Quick Veggie Frittata

Also one of my go-to meals as it is quick and easy and a crowd pleaser. Or an Antoine pleaser in my case.

It is normally finished in the oven but I find it’s fine if we skip this part. So we need:

  • 4 Eggs per person
  • 2 large spoonfuls of any dairy you have on hand; Milk/Yoghurt/Cream…
  • Grated cheese of choice
  • Toppings: Whatever you have on hand. But here are some of my go to.
  • Spinach, Broccoli, Cherry tomatoes, Basil and FETA. Gotta have the Feta.
 

One Pot Shakshuka On Toasted Sourdough

Ingredients:

  • 1 Red onion
  • 1 Red pepper
  • 1/2 Yellow pepper
  •  3 Garlic Cloves
  • 1 Tsp Cumin 
  • Can tomato pure 
  • 4 Eggs / or 6 Quail Eggs
  • Fresh Basil or Cilantro
  • Bread or Sourdough
  • Lea and Perrins (optional)

METHOD:

  1. Dice the onions and peppers as small as possible. 
  2. Simmer until soft (about 8 mins)
  3. Add garlic and spices and cook for an additional 2 mins.
  4. Pour in the tomato, add fresh herbs and L&P (if using) and simmer for 5 mins. 
  5. With a spoon, make a little pocket in the mixture and tip an egg in each. Let cook for a minute then sprinkle feta. 
  6. I like adding little dollops of greek yoghurt and a few fresh herbs for garnish. Then spoon some on some bread or dip your bread in straight to the pan. YUM

Fish Tacos With Siracha Mayo Sauce

YUM YUM YUM. This one is my all time favorite. Here is what you need:

Filling:

  • White flaky fish (Any)
  • Prawns (optional)
  • Corn tortilla wraps
  • 1 Avocado
  • 1 lime
  • Red cabbage 
  • Red onion
  • Sweet corn
  • Fresh Cilantro

The sauce:

  • Greek Yoghurt
  • Cumin
  • Garlic powder
  • Lime juice
  • Lea n Perrins
  • Siracha
  • Salt
  • Pepper (optional)
  1. Start by chopping thin and long slices of cabbage and half the onion, add lime juice and let pickle.
  2. Dice tomatoes and the other half red onion and lix it with lime juice and chopped cilantro. 
  3. Cook the fish fillets in the pan with olive oil, garlic powder, cumin and chili flakes (if you have them) until it flakes easily.
  4.  For the sauce, mix two large dollops of yoghurt with a dash of L&P, and a teaspoon of siracha (or more if you like it extra spicy!!!)
  5. Finally, slice or mash avocado.
  6. Now just fill up your taco best way you like. and get ready, it’s gonna get messy!

Tomato & Basil Bruschetta

A spin on the classic, as Italy meets Mexico. Pico de Gallo with feta is so fresh and tasty, the perfect summer meal if you ask me.

Ingredients:

  • 4 large ripe Tomatoes
  • Fresh Basil
  • Olive Oil
  • Red onion
  • Lemon juice
  • Feta (Optional)
  • Garlic powder
  1. Chop up the tomatoes, fresh herbs and onion, and place them in a bowl.
  2. Add a drizzle of olive oil, garlic powder, pinch of salt and squeeze over half a lemon.
  3. Toast some bread (your favourite toasting bread) then add bowl mixture on top of each slice of toast.
  4. Finally, if you are using some, crumble some feta over your Bruschettas and dig in!
